The valley stretches wide and green below our farm — the same Rift Valley that runs the length of East Africa, sculpted by tectonic forces over millions of years. The volcanic soil here has been building complexity into every coffee cherry for generations. Our family has been part of that story for decades.

The Valley Bloom is our most honest cup. It blends all three grades from our harvest;  the prized AA beans, the full-bodied AB, and the smooth, crowd-pleasing C grade - exactly the way our farmers blend them for their own morning coffee. Bold. Balanced. Unpretentious. Alive with the character of the valley itself.

Citrus brightness from the AA beans. Caramel sweetness from the AB. Berry sweetness from PB and Chocolate depth from the C. Together, they create something no single grade achieves alone.

The recommended brewing ratio for our  Kenya farmers blend falls within the range of 1:15 to 1:17. This means using 1 gram of coffee for every 15 to 17 grams (or milliliters) of water. 


Here’s a detailed breakdown:


Brew method:


  • Espresso: For espresso, you might use a ratio closer to 1:2 or 1:2.5, meaning 18 grams of coffee could yield around 36-45 grams of espresso.
  • Pour Over: For methods like pour over (e.g., V60), a ratio of 1:15 to 1:16 is common. For instance, you could use 20 grams of coffee for 300 grams of water.
  • French Press: A French press might use a ratio of 1:15 to 1:17. If you're using 30 grams of coffee, you would use between 450 to 510 grams of water.
  • Drip Coffee: Drip coffee makers usually use a ratio of 1:16. So, for 25 grams of coffee, you'd use 400 grams of water.


These ratios ensure a balanced extraction, highlighting the rich, bold flavors typical of darker roasts without becoming overly bitter or underwhelming. Adjustments can be made based on personal taste preferences and the specific characteristics of the coffee beans.


General Tips:

 

  • Use fresh, cold, filtered water for the best tasting coffee.
  • Rinse your filter before adding coffee grounds. This helps to remove any paper taste from the coffee.
  • Bloom your coffee grounds before pouring the rest of the water. This means pouring a small amount of hot water over the grounds and letting them sit for 30 seconds. This allows the CO2 to release and helps for a more even extraction.
  • Adjust the grind size, water temperature, and coffee-to-water ratio to taste.
