  • ½ cup unsalted pistachios (shelled)
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons hot water

For the Latte:

  • 1 cup milk (dairy or non-dairy like almond or oat milk)
  • 1 shot espresso (or ½ cup strong brewed Solai Coffee)
  • 1-2 tablespoons homemade pistachio paste (adjust to taste)
  • Whipped cream (optional for topping)
  • Chopped pistachios (optional, for garnish)

1. Make the Pistachio Paste:

  • Blend the pistachios in a blender or food processor until they form a fine powder.
  • Add honey (or maple syrup) and hot water, then blend until smooth and creamy. Set aside.

2. Brew the Coffee:

  • Prepare a shot of espresso or strong Solai Coffee. Set aside.

3. Heat and Flavor the Milk:

  • In a small saucepan, heat the milk on medium until hot but not boiling.
