Inside every coffee cherry, something rare can happen.

Most of the time, a coffee cherry develops two seeds. They press against each other as they grow, becoming the flat-sided beans you recognize. But occasionally,  in about one in every ten cherries, something different happens. A single seed forms instead. It grows round and dense, absorbing everything the cherry had to give.

We call them precious beans. Because that's exactly what they are.

From our family's farm in the Solai Rift Valley, these peaberries deliver a cup that serious coffee drinkers immediately recognize. Tropical berry brightness. A deep blueberry undercurrent. The beauty of Peaberry coffee is that it brews well with most methods, but there are a few key things to remember to unlock its full potential:

  • Grind: Since peaberries are denser, they benefit from a slightly coarser grind compared to regular beans. This prevents over-extraction and bitterness. Think medium grind for automatic drip, medium-fine for pour-over, and a bit finer for espresso.
  • Water Temperature: Aim for just off boiling, around 195-205 degrees Fahrenheit (90-96 degrees Celsius). Boiling water can scald the coffee and lead to a harsh taste.
  • Coffee to Water Ratio: This is a matter of personal preference, but a good starting point is 1-2 tablespoons of ground coffee for every 6 ounces of water. You can adjust based on how strong you like your coffee.

Here are some brewing method specifics:

  • Pour-over: This is a great way to highlight the nuanced flavors of peaberry coffee. Follow your preferred pour-over technique, but remember the coarser grind and adjust water flow for a slower, more even extraction.
  • French Press: The immersion method of the French Press works well with peaberries. Use a coarse grind and steep for 3-4 minutes, then press slowly for a clean cup.
  • Automatic Drip: Most automatic drip machines work well with a medium grind. Experiment with the coffee-to-water ratio to find your sweet spot.

General Tips:

  • Use fresh, cold, filtered water for the best flavor.
  • Pre-heat your mug or carafe to maintain optimal brewing temperature.
  • Start with a medium grind and adjust based on your taste and brewing method.
